Knife & Fork Veggie Pizza

Ingredients (serves 2-4):

¼ cup EVOO

1 cup grape tomatoes, halved

½ tsp. each dried oregano, dried basil and minced garlic

¼ tsp. kosher salt

¼ of a medium white onion, chopped

 

1 cup cauliflower, chopped (pieces should be very small and bite-size)

½ bunch of Lacinato kale leaves, washed and torn into thin strips about 2-3” long (no stems)

1 Extra-thin whole wheat Roman style pizza crust (pre-made)

2 cups mozzarella cheese

2 oz. goat cheese, plain

Instructions:

1.     Preheat oven to 400 degrees

2.     Stir grape tomatoes and olive oil together in a small bowl

3.     Add oregano, basil, garlic, and salt to tomato mixture and stir; Set aside to marinate for 10-15 min

4.     Roast chopped onion & cauliflower on cookie sheet for 10-15 min in oven (until tender and slightly brown on top)

5.     Strain out tomatoes from olive oil mixture and place into separate bowl

6.     Spread pizza crust with olive oil mixture (this is your “sauce”)

   7.     Top pizza with mozzarella cheese, then roasted cauliflower & onions, kale, and grape           tomatoes

8.     Dot top of pizza with goat cheese

9. Place directly on rack and bake for 9-12 minutes (watch carefully!)

10. Serve immediately with a knife & fork!
