One of our favorite summer foods is steak on the grill, and we almost always make a little extra for leftovers. We love to slice it and use it over the next few days in tacos or salads.
Here is a super-easy weeknight meal using leftover steak from your weekend cookout. Just whip up this salsa and wrap it in a tortilla with sliced steak and sour cream.
AVOCADO CORN SALSA
:⅔ Cup frozen corn, thawed
2 Tablespoons fresh chopped cilantro
1 Avocado, ripe but firm
1 Cup diced cherry tomatoes
Juice from 1-2 limes
¼ Teaspoon kosher salt Serve with warm tortilla shells, sliced grilled steak, and sour cream.
